Weekend Reads
Personally on the weekends and I have a quite and relaxing morning I love to read through some cooking magazines. When I get a new one in the mail during the week it is something that I always look forward to during the weekend. Do I always find something.... no, but it almost without a doubt inspires me to get into the kitchen and whip an old favorite up or something completely new. Below are a list of some of my go to food magazines, either buy a copy or subscribe for a year you can't go wrong. Enjoy the reading and happy!!!

9-inch loaf
Prep. Time: 20 mins Total Time: 1 hr 20 mins
INGREDIENTS
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon cinnamon
½ teaspoon nutmeg
½ teaspoon ginger
½ teaspoon salt
1 15 ounce can pumpkin puree
1 cup sugar
1 stick unsalted butter, melted and cooled
2 large eggs
2 teaspoons vanilla extract
INSTRUCTIONS
1. Preheat oven to 350 degrees F. Spray a 9-inch loaf pan with nonstick baking spray.
2. Whisk together flour, baking soda, baking powder, cinnamon, nutmeg, ginger and salt in a large bowl.
3. In a separate bowl whisk together pumpkin puree, sugar, butter, eggs and vanilla in separate large bowl until smooth. Add the flour mixture to the pumpkin mixture and mix until just combined.
4. Scrape the mixture into the prepared pan and bake in the oven for 55 - 60 minutes and a toothpick inserted into the center comes out with a few moist crumbs.
5. Let cool in the pan for 10 minutes before unmolding onto a wire rack to cool for 1 hour.
